1/2cupplain or herbed dry breadcrumbs
1/4teaspoonfreshly ground black pepper
1/4teaspoonsaltor to taste

2tablespoonsfinely sliced green onions or chives
4stripscrispy baconfinely crumbled
1largeegg
1/2teaspoongarlic powder
Oil suitable for deep frying(such as canola or vegetable)
Instructions
Preparation
In a large mixing bowl, combine the cold mashed potatoes, shredded cheese, crumbled bacon, chives or green onions, garlic powder, salt, and pepper. Mix well until everything is evenly combined.
Add the egg to the potato mixture and blend until the egg is thoroughly incorporated.
Scoop out portions of this mixture, about one tablespoon each. Use your hands to shape them into compact balls. If the mixture feels too soft, place it in the refrigerator for 15 to 20 minutes to firm up.
Lightly coat each potato ball in flour. Then, roll them in the breadcrumbs until fully covered. For extra crunch, you can dip the balls in a beaten egg between the flour and breadcrumb layers.
Cooking
Heat a few inches of oil in a deep pan over medium heat until it reaches 350°F (175°C).
Working in small batches, carefully lower the potato bites into the hot oil. Fry for 2 to 3 minutes on each side, or until they are golden brown and crispy.
Remove the fried bites from the oil and place them on a plate lined with paper towels to absorb any extra grease.
Serving
Serve hot with your favorite dipping sauces like sour cream, ranch dressing, or something similar.
Notes
Chill the mixture if it’s too sticky. Ensure oil is at the right temperature for frying. You can bake the bites at 400°F (200°C) for 20-25 minutes instead of frying.
